Pepper is the most popular spice in the world, and was so prized at one point in history that it was used as currency. We all have different takes and opinions, when it comes to our preferred spice to improve the overall taste of our dishes. Therefore, some spices, for example pepper, have a different variety to suit the needs of the choosier taste buds. Both white and black peppers come from the same plant (Piper Nigrum), and both are used for seasoning.Black and white peppers are berries that are cooked minimally in two ways. -Under the heat of the sun and in water, and are predominantly grown in south Asia.

Piperine in white pepper, has shown to be effective against vitiligo-a skin disease that causes areas of the skin to lose their pigmentation. -White pepper may help with weight loss. Researchers from the Sejong university in Seoul, Korea suggest that peperine inwhite pepper battles fat by blocking the formation of new fat cells. -Black pepper may slow down aging, because it inhibits the end products of protein glycation, which speeds up aging. To use the spice effectively, it is important to know how they differ in terms of appearance and flavor. How they get their colors:
For black pepper, which most people are very familiar with,berries are picked from the plant they are close to ripe. They are sun-dried This process will turn the skin of the peppercorn black. which gives it its characteristic aroma and sharp bite. For white pepper, you’ll have to wait for it to ripen beforepicked, soaked in water to ferment,then theirouter layer is removedbefore drying This process leaves the seed of the peppercorn exposed. Thus, the white pepper is just the seed of the peppercorn, compared to the black pepper which is the entire peppercorn. Although stripping the skin removes much of the oils and aroma. Allowing the berries to ripe longer lets them develop more complex flavor, while fermenting adds another layer of flavor. Hence the difference between the two is a matter of processing.
Which is spicier, Black or white?
When it comes to HEAT, white pepper wins as its spiciness is more pronounced compared to black pepper. Some cuisines lend themselves more naturally to one over the other. For example, white pepper is widely used in Indian, Asian and Mexican cuisines. To me, the food from these regions is very earthy and highly spiced. I don’t necessarily mean “hot,” just well spiced. However, food experts believe that the flavor of white pepper is less complex when compared to black pepper. This is because, the out layer found on black pepper contains compounds that add to the complexity of its flavor. So, the fact that it has the outer layer gives black peppers a greater range of flavor.
Can black pepper be used in place of white pepper and vice versa? While it is possible to substitute, it is important to note that, white pepper is used to preserve a uniform appearance in a cream sauce likeBéchamel and other lighter colored dishes. Some chefs use white pepper strictly for aesthetic reasons. In such dishes, it may not be possible to use black pepper as substitute, unless you have no problem seeing black specks. Some recipes call for white pepper when uniformly light-colored results are desired. if you choose use back pepper in place of white, because white is spicier than black pepper, use more of the back pepper. In dishes where I want to highlight earthiness, I use white pepper. In dishes where I am just looking for a base note of heat, I use black pepper.

White pepper is usually more expensive, simply because it’s production process involves one more step (stripping it outer layer) Do they have different shelf lives? Yes, they do. Even though white pepper is more potent in terms of spiciness, it also goes stale faster than black pepper. Black pepper can hold onto its flavor and scent for much longer. A tip to help you ensure you white pepper hold longer in flavor and taste, is to purchase the whole(grain) and grind it yourself at home. Freshness is key to good white pepper, which turns stale and bitter faster. They both can get moldy if stored in too humid conditions. They both can get bad if they get wet.
